Tannin is that component of wine that adds astringency. It is one of the four ingredients that must be balanced in a good wine (alcohol and sugar against acid and tannin). In conventional wines it comes from the skin of the grape, but in our country wines it is often listed in the recipe as the fruits themselves contain very little. If in doubt add it the end in small amounts - you cannot take it out, but you can always add more. Typically a wine that is too alcoholic or too sweet can benefit from the addition of a little tannin.
