Unlike the adult plant, they have a higher concentration of nutrients and are easier to digest. Its sprouts, with purifying properties, are particularly rich in vitamin C and have a very strong and spicy flavor. Watercress is an easy plant to grow and can act as a vitamin supplier in winter. Once germination has occurred, wait for the typical leaves to appear. Watercress is a mucilaginous seed, so you must pay close attention to the growth of the sprouts, especially in the first few days of germination. The small watercress seeds, placed in water, immediately develop a completely water-repellent gelatinous membrane. As with all other mucilaginous seeds, the rules are the same: moisten (by spraying) very little for the first few days and increase the amount of water slightly as the gelatin is absorbed and the buds develop. It is advisable to soak the seeds for about 10 hours and remove any defective seeds. Then, rinse the seeds and place them in a germination container according to the table. Use a multi-layer sprouter and distribute the seeds evenly. In all cases, water 2 to 3 times a day until germination is complete.
