Our Organic White Miso is made according to an ancient family recipe in the Japanese prefecture of Nagano and offers a delicious balance between salty and sweet, with an umami touch. Use it to prepare an authentic Japanese miso soup or to season and enrich the flavor of stews, casseroles, sauces, and salad dressings, and even as a glaze. Dissolve it in a little water and add it towards the end of cooking. Miso will naturally darken over time; this will not affect its quality. Miso is a living product and ongoing fermentation may cause the lid to bulge. It is still safe to consume. Exposure to air may cause harmless white yeasts to appear. Simply remove the foam.
