Ume plums (Prunus mume) provide the characteristic sour and salty taste of umeboshi paste after fermentation and salting. Shiso leaves (Perilla frutescens) add aromatic notes that complement its flavor profile. This combination of ingredients makes the paste suitable for use as a condiment in culinary preparations, especially in sauces, dressings, and grain or vegetable dishes.
