Quinoa ist ein leicht verdauliches Lebensmittel und lässt sich in kurzer Zeit keimen. Sein Geschmack erinnert stark an braunen Reis, obwohl seine Textur viel feiner ist und an Couscous erinnert. Seine lange Haltbarkeit ist auf das Vorhandensein eines Saponins zurückzuführen, das das Getreide vor dem Befall durch Parasiten oder Insekten schützt und erst verschwindet, wenn es mit reichlich Wasser gewaschen wird.
