Nigari er magnesiumchlorid, der bruges til at lave tofu. Tofu er et vegetabilsk protein, der er tilberedt med sojabønner, vand og osteløbe. Det er populært i hele verden og fremstilles ved at koagulere sojaproteiner, hvilket er særligt interessant for at være den fødevare af vegetabilsk oprindelse med det højeste indhold af komplette proteiner, med de 9 essentielle aminosyrer.
