Description

Nigari is magnesium chloride that is used to make tofu. Tofu is a vegetable protein that is prepared with soybeans, water and rennet. It is popular all over the world and is prepared by coagulating soy proteins, being especially interesting for being the plant-based food with the highest content of complete proteins, with the 9 essential amino acids. For this coagulation to occur, nigari, a salt containing magnesium chloride, is traditionally used. 15 g of nigari per liter of soy drink is recommended.
