Ground coffee Peru The Gold of the Andes is a pure coffee, which comes from the solidarity trade, and is cultivated at height. The soil where it is cultivated is very rich, and artisanal production and manufacturing methods are also used. In the El Palomar area, all conditions are met to produce high-quality coffee. This is the first height between 1,400 and 1,900 m, which gives the grain a particularly pleasant flavor. Arabica varieties used, such as typica, bourbon, caturra and pache, contain very good aromatic characteristics and are also resistant to disease. The plantations grow in the shade of large trees, preventing Pacay from burning from the sun during the flowering of the coffee trees. Too much sun exposure commonly causes flower drop, preventing fruit formation, dramatic consequences for the farmer who loses most of his harvest. Therefore adequate shade is developed successfully, not too dark because the fruit also needs sunlight and heat to ripen. The presence of trees is also a form of ecological culture that preserves the ecosystem. The roots help to conserve the soil, avoiding erosion, and the aerial part is the habitat of animal species (monkeys, birds) and respecting the environment. The falling leaves provide organic matter for the coffee, the production of a thick layer of humus, essential for plant growth, fertilizers to avoid additional costs for owners whose resources are limited. A well-controlled shade also guarantees a low presence of the disease. Shade is too effectively high in moisture, mold, and a source of disease.
