Organic kuzu root starch from Salud Viva. Kuzu is a starch obtained from a large root that penetrates deep into the ground, derived from the plant Pueraria lobata, a climbing plant of the legume family. Country of origin: China. Kuzu starch is ideal as a natural thickener, used in sauces, soups, desserts, infusions. It is gentle on the stomach, gluten-free, and valued for its digestive properties.  Kuzu has been used in traditional Chinese cuisine for more than two centuries due to its beneficial qualities. It has a neutral flavor, so dishes do not acquire the typical starchy taste as often happens when using other thickeners, and preparations become wonderfully creamy. Culinary uses: Thickener: It is an excellent natural thickener for soups, sauces, desserts, and beverages. Its gelling capacity is much superior to other starches. It can be fried (tempuras, batter) up to 180ºC to achieve a crispy and light texture.Egg alternative: Can be used as an egg substitute in some vegan recipes to bind ingredients and provide consistency. Preparation: Usually dissolved in cold water before heating to avoid lumps. Then add the kuzu to the liquid to be thickened. Bring to a boil, stirring constantly until the milky white becomes transparent, boil briefly. The mixture becomes translucent when cooked.Dosage: 2 teaspoons of kuzu are sufficient to thicken 500 ml of liquid. 5 grams of kuzu equals 15 grams of cornstarch.     May contain traces of nuts and sesame.
