The Smooth Sultan Chickpea is a cultivar of cicer arietinum, an annual herbaceous plant of the legume family native to the Middle East and cultivated since time immemorial throughout the Mediterranean basin. It has small smooth spherical seeds of a straw yellow color with remarkable organoleptic qualities, due to the variety, the cultivation method and above all the soils in which they are produced. It is clearly distinguished from others that can commonly be found on the market. Important for their contribution of proteins with high nutritional value, they are very rich in starch, vitamins A and C and also contain good amounts of fiber, calcium and iron. The Sultano cultivar has the peculiarity of cooking quickly and has a thin skin that allows it to be the most digestible of the legumes. The Principe di Gerace chickpeas come exclusively from the land of our farm located in Abruzzo, dedicated to the cultivation of this legume since medieval times. Naturally gluten-free, their excellent flavor makes them an ideal ingredient in the kitchen for the creation of various recipes: from typical soups and soups, to soups and flans, cold in salads or as a side dish to accompany fish dishes. Boiled, they can be enjoyed on their own simply seasoned with extra virgin olive oil and, finally, they can be protagonists in the preparations of oriental cuisine, such as falafel and hummus.
