Chia is a herbaceous plant, native to the mountainous areas of Central America and used since pre-Columbian times, where it was one of the staple foods for the inhabiting civilizations. Chia seeds stand out for their richness in nutritional components such as polyunsaturated fatty acids (omega 3 and 6), dietary fiber, vitamins and minerals.
Apart from the impressive contribution of omega 3, the seeds contain about 20% protein. Among the essential amino acids they contain, lysine stands out, a limiting amino acid in other cereals.
They do not contain gluten, so they are suitable for people who are allergic or intolerant to gluten.
They are a valuable source of soluble and insoluble dietary fiber. Diets rich in fiber help maintain digestive and intestinal health and facilitate the evacuation of stool.
In terms of vitamins, minerals and trace elements, chia has a high content of Calcium, Iron, Magnesium, Potassium, Zinc, Manganese, Phosphorus, Copper, B vitamins and Vitamin E.
Chia seeds also contain flavonoids that help keep the fatty acid composition of the seeds more stable. This prevents them from going rancid quickly, unlike what happens with other essential acids obtained from fish or algae that oxidize easily.
It is recommended to consume chia seeds, they are placed between two tablespoons of seeds in a glass of water, juice or another drink.
