La sauce tamari de El Granero Integral est une sauce fermentée élaborée à base de soja, d'eau et de sel. Elle est riche en sodium et apporte également en quantités significatives des glucides, des protéines, du calcium et de l'acide acétique. Contrairement à la sauce soja, elle ne contient pas de blé, ce qui la rend adaptée aux personnes intolérantes à cette céréale, et elle est généralement moins liquide avec une saveur plus intense. Elle peut être utilisée comme substitut du sel, rehaussant grandement la saveur des aliments. En raison de sa saveur intense, elle se marie mieux avec les viandes et les poissons qu'avec les légumes.
